Today I had lectures from 11am to 3pm with the same lecturer so I definitely needed fuel for the day. I stocked up on loads of fruit and had two smoothies – a strawberry, apple, banana, orange and grape smoothie, and an apple, mango, banana, orange and passion fruit smoothie. As soon as I came home, I went straight into the kitchen to make my late lunch. I made some oven baked sweet potato wedges, roasted broccoli and carrots, lettuce, tofu fried with paprika and leftover quinoa from yesterday – all made without oil.
This was so filling I didn’t really need to snack in between until dinner. I was excited to make pasta for dinner as it’s my favourite food, I could happily have pasta for every meal for the rest of my life. I started by cooking all the veggies I had.
I always make my own sauce and will put up a recipe for it soon. My cleaner ‘detox’ sauce was chopped tomatoes, dried herbs, garlic, onion, lots of veg, paprika (if you couldn’t tell, it’s my favourite spice) and basil leaves. I used wholewheat penne pasta and stirred it all all in.
It was more delicious than it looks. I also added a bunch of spinach. I would have liked to have topped it with some black pepper but I feel like one of my flatmates has stolen my pepper grinder weeks ago. I will find it one day.
