Vegan Black Bean Taquitos

Upon my parents’ return from their holidays, my sister and I decided to make a yummy vegan spread for their arrival. One of the dishes we made were these vegan black bean taquitos! They were flavoursome, warming, and full of nutrients. I hope you decide to make them and enjoy!


Ingredients:

  • One red onion (diced)
  • 2 cloves of garlic (diced)
  • Vegetables of choice – I chose carrots, mushrooms, red peppers and (all diced & the same size, around 3 cups)
  • A splash of olive oil or water to fry with
  • A can of black beans
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp turmeric
  • 1 tbsp ground coriander
  • 2 tsp onion powder
  • 1 chilli / 1 tbsp chilli powder
  • 1 tbsp oregano
  • 1 tbsp agave / maple syrup or any sweetener
  • Salt to taste
  • If you don’t have all the spices and you want to save money, use fajita seasoning (I won’t tell)
  • 8 small tortillas – corn tortillas work the best
  • Half a can of chopped tomato and 2 tbsp of tomato purée OR a whole can of chopped tomatoes

For the guacamole:

  • 1 avocado
  • 2 spring onions
  • A handful of chopped tomatoes
  • Pepper to taste (optional)
  • Juice of one lemon

Method:

  1. Preheat the oven to 160ºC
  2. Fry the diced onion and garlic for 5 minutes in a little oil or in a little water (top up the water every few minutes)
  3. Add in all of the other veggies and cook for another 5 – 8 minutes, stirring occasionally
  4. Drain and rinse the can of black beans, then add this to the pan and stir together for around 3 – 4 mins, make sure you keep stirring every so often to make sure nothing sticks
  5. Add in the canned tomato and tomato purée if you’re using it and stir until it is all combined
  6. Throw in all of the spices! If you want to make this even easier, just buy fajita seasoning and use that (there’s no shame!)
  7. Stir all of this for about 7 – 10 minutes until it’s all soft, taste it and see if it’s as good to you as it was to me
  8. Assemble it in your tortillas and wrap them up, you can use toothpicks to keep them wrapped if they won’t hold together
  9. Bake in the oven for around 15 – 20 minutes, until the edges crisp up
  10. Whilst this is baking, make your guac! Smash up the avocado and mix all of the guacamole ingredients in a bowl – done!
  11. Take your taquitos out of the oven, put some guac over them when serving and enjoy because they are so tasty!!
